Owner and Founder Austin Publicover has over 20 years of experience in hospitality and project management, most notably as Operations Manager for Danny Meyer's Union Square Hospitality Group in the heart of Manhattan. He is a certified professional in food safety with two lead instructor certifications in HACCP and five HACCP certificates, covering everything from seafood and juice to fresh-cut and manufacturing. Under his leadership Bulletproof! Food Safety has conducted more than 600 inspections and site audits and developed HACCP and preventive controls plans for clients such as MoMA and Gramercy Tavern. He has worked with food products as diverse as breaded poultry, gelati, confections, smoked salmon, tortillas, reduced oxygen packaged methods for retail, imported bottled water, HPP’d pesto sauce, and lots of fruit and vegetable juices.
